Here is a simple recipe to make potato curry quickly.
Ingredients
- 4 Idaho potatoes (boiled and crumbled)
- 1 small onion (cut into length wise)
- 2 tomatoes (cut into very small chunks)
- 2 red chilly (broken into ½)
- 1 green chilly(cut into length wise)
- 1 garlic pods crushed
- Cinnamon stick flat 1(broken into 2 to 3 pieces)
- Cloves 2 or 3
- ½ teaspoon paprika
- ½ teaspoon turmeric powder
- ½ teaspoon curry powder
- Salt (to taste)
- 2 tablespoon olive oil
- Coriander leaves (to garnish) optional

Directions
1.Cook potatoes till it is tender and easy to crumble.
2. Heat a heavy deep bottomed pan, add the oil. When the oil gets hot, add cinnamon stick, cloves red chilly, green chilly, garlic and finally add onions.
3. When the onion becomes translucent ,add tomatoes and fry for 5 more minutes.
4. Now add 2 cups of water and add turmeric powder, curry powder and wait till the water boils.
5. Finally add the crumbled potatoes with salt into the boiling water and cook for 10 – 15 minutes.
6. Check for the water in pan whenever necessary. Remove from heat. Garnish with coriander leaves before serving. (optional)
Note: This goes well with breads, rice or chapatti.
