If you really want to fix something fast for your meal, then this tangy lemon rice would come in handy. Tangy flavor of lemon juice and the crunchiness of seasonings make this dish a delicious one!
Ingredients
- Rice (brown or white) – 2 cups
- Medium sized lemons – 2
- Onion – 1 (chopped)
- Green chillies 4 (slit)
- Olive oil – 2 tbsp
- Salt – to taste
- Turmeric powder – 1tsp
Seasonings
1 tsp mustard seeds
1 tsp split urad dhal
1 tsp channa dal
2 tablespoons unsalted peanuts
1 sprig of curry leaves
Cilantro for garnishing
1/2 tsp turmeric powder
Directions
1. Cook the rice. Spread it on a baking sheet and let it cool. Set aside.
2. Squeeze the juice from the lemon.
3. Heat oil in a pan. Add mustard seeds. Let it pop. Add urad dhal, channa dal and let the dhals turn red. Add curry leaves to this mix.
4. Add peanuts and fry them for around 2 minutes.
5. Add green chillies along with the onions and curry leaves.
6. Fry till the onion is cooked and then add turmeric powder and salt.
7. Stir in the lemon juice and mix it well . Switch off the stove.
8. Mix in the rice gently and thoroughly till the lemon sauce blends well with the rice. Do it carefully so as not to break the rice grains.
9. Garnish with cilantro and Serve with potato chips or pickle.
