We are in the middle of winter and it is freezing cold outside! On a cold day like this, I find great comfort in staying warm with some hot, steamy food.
So, I decided to prepare split pea soup and it came out very well.
Ingredients
1. 2 cups dried green peas, soaked overnight.
2. 1 onion (can use red or white)
3. 2 carrots (diced finely)
4. 2 cloves of garlic (or can use garlic powder)
5. 1 tablespoon of extra virgin olive oil.
6. Salt as needed.
7. Fresh ground pepper.
8. Vegetable stock (optional)
Directions
1. Add some olive oil to the pot. To this add the onions and garlic. Let them cook for few minutes.
2. Once the onion becomes translucent, add the carrots. Sauté them for 2 minutes.
3. Add the soaked peas and 5 cups of water. Cook them for 25 minutes on medium flame.(Tip: To check if it is cooked, scoop out some peas in a spoon. Peas should be soft and mushy.)
4.Scoop out 3/4 of the peas and grind it in a blender or food processor. Add water or vegetable stock to the ground paste.
5. Now bring the pureed peas to a boil and add the 1/4 cup of reserved peas. Add salt and ground pepper.
6. Ladle into the bowls and drizzle some lemon juice.

We had the soup with toasted garlic bread. Could say it was a hearty soup on a cold winter day!
